Food coloring is one of the
aspects that affect customer purchase behavior, as customers judge flavor &
wellness features of drinks & foods by its color. Colors of the food
products, and even for packaging, are selected on basis of the functional &
emotional benefits perceived by the customer and the target market. The worldwide
natural food colors market is anticipated to reach USD 2.5 billion by 2025 as
per a new report published by Grand View Research, Inc.
Over the past few years, a
number of companies such as General Mills & Nestle have stopped the usage
of synthetic food colors as a result of the Food and Drug Administration (FDA)
investigation on negative behavioral effects from exposure. The demands for
natural food colorings started in 2007 when the artificial colors were linked
to hyperactivity in kids. The rising concerns about various health hazards
related to the artificial & natural identical colors are projected to boost
the demands for the product over the forecast period (from 2014 to 2016).
